Indian Egg Curry Recipe

Yesterday I was craving to eat egg curry. The curry where we will break the egg inside the curry. The taste of egg will mix with the curry and it tastes so yummy. I don't like boiled egg curry.

So, I got this recipe from my cousin and alter it a bit and cooked it. The taste really good. This is similar like indian style chicken curry where we don't use milk.

The ingredients are:
1. 2 eggs
2. 1 1/2 tablespoons of chicken curry powder
3. 1 1/2 tablespoons of chilli powder
4. 2 small red onions sliced
5. 2 small cinnamon sticks
6. 2 cloves
7. 2 star anises
8. 1 1/2 mug of water
9. cooking oil
10. salt to taste
11. anchovies

First of all, heat up the pot and then add cooking oil and heat for a while. Then, add the cinnamon sticks, cloves and start anises. Fry for a while. Then, add the onions and garnish them. After that, add the washed anchovies and fry for a while.

Then, add the chilli powder and curry powder. Add water immediately. Let it to boil for a while. When it is boiling, break the eggs inside the curry. Don't stir immediately. If you stir immediately, the eggs will disappear. Leave the eggs for a while to cook and then start stirring. It depends on how hard you want the eggs. Finally, add salt to taste and leave it to boil. If the curry very thick, add water. If it is watery, let it to cook somemore. Thats all. Now the yummy egg curry is ready to eat. I ate it with bread.
